TA (Titratable Acid) is a measure of the amount of acid in a sample that can be neutralized by a standardized alkaline solution. It can be referred to in grams/liter (g/l) or as a percent. 10g/l = 1%.

Typical havest values for mature grapes are:

Red: 6.5g/l - 7.5g/l, White: 7g/l - 8g/l
